How to prepare

Rinse briefly, then soak in warm water for 20 to 30 minutes until pliable. Lift the morels out rather than pouring, so any grit stays in the bowl. Strain the soaking liquid through a fine sieve and use it in the sauce. Morels must be cooked before serving.
